Professor Andrea Pieroni, teacher of Food Biodiversity, Ethnobotany and Ethnobiology, leads a workshop dedicated to the spontaneous herbs and plants that you can find in urban settings. He will tell us about the qualities and nutritional values of the some of the species we can find, and how they can be used to give character to dairy products: a journey to the roots of cheese, literally.
