Cheese 2021 in Bra and beyond
There are lots of details still to be defined regarding locations for Cheese 2021 in Bra, but there’s lots of useful info we can share already based on previous editions.
If you’ve been to Bra during Cheese before you’ll know there’s only one way to travel: on foot. You can see, hear and do everything on offer within a radius of just over a kilometer.
This year the space will be organized differently to allow for an ordered flow of people and to avoid mass gatherings.
The Great Hall of Cheese and Enoteca
The Great Hall of Cheese is the festival’s wonder-room, with over 100 foreign cheeses from France, Spain, Portugal, the UK and beyond, including cheeses from Slow Food Presidia and other curiosities. This year there’ll be 5 different tasting plates on offer, representing the local breeds of different areas.
You can pair these with 300 wine labels available in the Enoteca, as selected by the Wine Bank in Pollenzo and the sommeliers of Fisar.
A place of honor is reserved for natural products: cheese made without industrial starters and wine without sulfites.
Educational space: Animal behavior
How do cows, sheep and goats behave when they’re grazing on pastures or in stalls? What behavioral differences arise if they don’t have adequate living space? What do they like to feed on? And what are the other living beings that contribute to the life and health of pastures? What importance to pollinators and microorganisms have for the soil? And thinking about the highlands, what other members of the animal kingdom should we take into consideration?
In the squares – The Italian and international market, affineurs, craft beers, food trucks and street kitchens
Producers of cheese and other delicacies bring their finest creations to the Cheese Market – cheeses of every size, shape and texture, as well as honeys, preserves, mustards… The cheese on sale is made exclusively with raw milk, and producers of natural cheese, i.e. without the use of selected starters, will be specially signed. Beyond the producers, you’ll meet the artisans of Affineur Alley, where old favorites and new faces present the best of their maturing rooms.
We will of course welcome producers who are part of the network of Slow Food Presidia: producers who protect traditional techniques, native breeds, artisanal products and rural landscapes, with familiar faces and some exciting new entries from Italy and other countries. We’ll also have producers of natural charcuterie, as the discussion of natural food goes beyond just cheese.
Among the squares you’ll also find a selection of craft beers, street kitchens and food trucks from across Italy with a wide range of delicious snacks and beverages.
The Biodiversity House has a rich program of activities open to all, with conferences exploring the theme Consider the Animals from the point of view of herders, cheesemakers and other experts.

IPC Velso Mucci e Liceo G. Giolitti – G.B. Gandino – Taste Workshops
As is tradition, the rooms of Bra’s schools host our Taste Workshops dedicated to cheeses from Italy and beyond.
Pollenzo, six kilometers from Bra, is the other main hub of Cheese 2019. Here, Taste Workshops dedicated to pairing cheese and wine are held at the Wine Bank and the Dinner Dates are held in the Ristorante Garden of the Albergo dell’Agenzia. There’ll be the opportunity for visitors to participate in a Sensory Analysis Workshop at the University of Gastronomic Sciences.
A special shuttle service will take you from Bra to Pollenzo and back, so you can create your own program and move around easily without using a car.
