Young, aged, rustic, refined. These are just a few of the many adjectives employed to describe grappa, the quintessential Piedmontese spirit.
Together with the experts from the Consortium for the Protection of Piedmont Grappa and Grappa di Barolo, which encompasses 19 distilleries located among the hills of Alessandria and Monferrato, Roero, Langhe, Northern Piedmont, and Turin, we present pairings of grappas, obtained from native and lesser-known grape pomace, with cheeses from the same territories, ranging from washed rind to blue-veined varieties. The grappas available for tasting are: young Arneis grappa, young Erbaluce grappa, aged Timorasso grappa, and aged Malvasia grappa.
We discover how grappa can also serve as a delightful accompaniment to dairy products.

- Grappa di Arneis by DISTILLERIA MAROLO of Alba
- Grappa di Timorasso by DISTILLERIA GUALCO of Silvano d’Orba
- Grappa di Malvasia invecchiata by DISTILLERIA MAGNOBERTA of Casale Monferrato
