This commitment is brought to the table at Cheese through the culinary creations of Juan Camilo Quintero, the executive chef of Relais & Châteaux Borgo San Felice Resort in Castelnuovo Berardenga.

Juan Camilo Quintero, hailing from Colombia, studied at Pollenzo at the University of Gastronomic Sciences. He honed his skills alongside renowned chefs such as Massimo Bottura and Juan Mari Arzak, culminating in a pivotal encounter with Enrico Bartolini. The kitchen at Borgo San Felice bears his unique mark, a fusion of the finest local produce sometimes harmonized with exotic ingredients and a natural homage to his Latin American roots. The dishes feature simple and traditional cooking methods, enriched by the scents of homegrown herbs and vegetables. The menu takes diners on a culinary journey from the Tuscan coastal sea to the hills of Chianti, an exploration that earned him a Michelin Star in 2021 and a Green Michelin Star in 2022. Tickets are available online until September 14. From September 15-18 any remaining tickets will be available to buy at the Event Reception in Via Mendicità Istruita 14.
