Almost all students of the University of Gastronomic Sciences shop at the farmers’ markets in Bra.

Here, a group of students from the Slow Food Youth Network, a youth association that promotes small-scale producers, got in touch with brothers Paolo and Roberto from the Pertusio farm. They raise free-range goats and produce cheese aged in 12th-century tuff caves in the municipality of Monteu Roero. Paolo, alongside the students, tells us about his work and guides a tasting of Monteu Roero Tuff cheese paired with wines from the Bajaj farm.
