Cheese supports Emilia Romagna in this Taste Workshop, thanks to the chefs from the Slow Food Alliance and wines from the producers of this splendid land.

Taking up the culinary challenge for the Slow Food Alliance of Romagna are Pietro Basile from Ossteria di Savignano in Savignano sul Rubicone and Giorgio Clementi from Osteria dei Frati in Roncofreddo. The former is an osteria that focuses on reviving traditional cuisine and exploring pizza, emphasizing the use of quality ingredients, including some Slow Food Presidia. The latter builds its offerings around local seasonal ingredients, Slow Food Presidia, and artisanal preparations.

From the kitchen:

  • Ossteria di Savignano presents: Romagna black pig meatballs with grilled Sant’Arcangelo onions, caramelized Tropea onions, and a fossa cheese cream. All served with a cracker version of the Romagna piadina.
  • Osteria dei Frati presents an oven-baked plums with Sangiovese reduction, fossa cheese cream, and thin slices of pancetta. It starts with a sweet syrupy base, goes through the astringency of Sangiovese, the richness of fossa cream, and ends with the spiciness of pancetta.

These dishes are paired with a selection of Romagna wines.

The proceeds from this Taste Workshop will support the Slow Food Insieme campaign for Emilia Romagna.

Tickets are available online until September 14. From September 15-18 any remaining tickets will be available to buy at the Event Reception in Via Mendicità Istruita 14.
