The first dinner at Cheese takes us to explore Spain and its forests, with a Michelin-starred chef and a project working on silvopastoralism, both convinced that a forest without animals is a dead forest.

Marc Ribas comes from Barcelona to Bra to tell the story of the Ramats de Foc project through the dishes presented during the dinner. Marc was born in Girona, and traveled the world to gain knowledge before returning to his homeland to combine expertise and sensitivity towards producers and the environment in a restaurant setting. We explore the Spain of Ramats de Foc, a project born in 2016, promoted by the Pau Costa Foundation and the Gremio de carniceros de Girona, and supported by the Cuerpo de Bomberos de la Generalitat de Catalunya group. The project currently involves 16 producers who, through their work and commitment, aim to protect local flora at risk of wildfires due to climate change through silvopastoralism, which means grazing livestock.

The food is paired with wines from the Slow Wine Coalition: Terre Margaritelli, Tasca D’Almerita, Damilano; and vermouth by Consorzio del Vermouth di Torino.

Pollenzo is located approximately 6 kilometers from Bra. During Cheese, the location will be easily accessible by shuttle.

Tickets are available online until September 14. From September 15-18 any remaining tickets will be available to buy at the Event Reception in Via Mendicità Istruita 14.
